The Brix level is the natural sweetness level of fruit, the public like a Brix level of 18 to 24, with experience, a Fractometer can determine which store stocks the freshest fruit, it,s easy to use, just pop a drop of juice onto its lense, look into an eyepiece and there it is, your brix level, which goes upto 30 max. Juice bars use them to mix drinks, a low value veg can be mixed with a high value fruit to arrive at a standard drink.
